食欲の秋！　実りの秋！　秋は果物の美味しい季節ですなあ。巷では、さつまいもを使ったスイーツ商品が続々と登場し、今では年中食える栗を使ったモンブランもこれからが本番。栗といえば、「栗ごはん」を食べられるのもこの季節の楽しみのひとつである。

ところで、栗ごはんはあるのに、同じく秋の果物、柿を使った「柿ごはん」はあまり聞かない。そもそも米と一緒に炊いて美味いのか？　気になったので実践してみた！

・栗ではなく、柿ごはん

そもそも柿ごはんのレシピは存在するのだろうか？　調べたところ、すぐに見つかった。名古屋のお米ブランド「ヤマトライス」のサイトに紹介されていた。それによると、とてもカンタンに作ることができる。

材料は米・柿・水・酒・塩・黒ゴマ塩だけ。詳しい分量については、ヤマトライスのサイトで確認頂きたい。

皮をむいて種をとった柿を乱切りにして……。

水・酒・塩・米と共に柿を炊飯器に投入。あとは通常通りの炊飯を行う。

おお～！　ちゃんと炊けていた～!!　柿のあま～い匂いがするぞ。

使用した柿は果肉の硬い「次郎柿」である。見るからに柔らかくなっているようだ。

お茶碗に盛って黒ゴマ塩をかけて完成です。味はどうかな？

ひと口食べると、柿の果汁を吸ったごはんはほのかに甘い。ゴマ塩を振りかけることによって、その甘さが一層引き立っている。香りづけのお酒は柿と相性がいい。やわらかく香る酒の風味が食欲をそそる。

ただ、加熱した柿を食べることはあまりないので、フニャフニャとした果肉の食感に多少違和感もある。きっと食べ慣れないせいではないだろうか。編集部のメンバーにも食べてもらったら、一様に好評だった。

買いすぎた柿を持て余してしまったら、柿ごはんにすることをオススメするぞ。

この黒猫がナップサック（リュック型）で背負うことができると知って、筆者の頭の中には、真っ先にこの黒猫を小さい子どもが背負っているシーンが浮かびました・・・！いい！絶対にカワイイ！！

しかも中には、ビスケットやグミなど8種類のお菓子がギュッと詰まっているから、ハロウィン前の今の時期、子どもへの手土産にピッタリ。

5歳児が背負ったらこんな感じ。ちょっとひもが長いかな？

首元で2部屋に分かれる仕組み

ニャップサックは大（胴体）・小（顔）2つの部屋からできています。顔の部分からはお菓子が2つ、身体の部分からはお菓子が6つ、1つの大きな袋に入って出てきました。

顔と胴体部分は一つにつながっており、首元の赤いひもをキュッと縛ることで上下2つの部分に分かれています。胴体部分に物を入れるときは、赤いひものあった首のあたりを内側から開き緩めると、くびれが広がります。

首元のひもを緩めると下の部屋にアクセスできます。

お菓子を食べた後は、ハロウィンの仮装アイテムとして使ったり、外出時に子どもに背負わせても可愛いですね。

ハロウィーンコーンスナック コーンポタージュ/たこやき

出来たてがおいしい｢揚げ出し豆腐｣の作り方を伝授します

料理の腕を上げるために、まず作れるようになっておきたいのが、飽きのこない定番料理です。料理初心者でも無理なくおいしく作る方法を、作家で料理家でもある樋口直哉さんが紹介する『樋口直哉の｢シン・定番ごはん｣』。今回は「揚げ出し豆腐」です。

揚げ出し豆腐は「揚げたて」がおいしい

今日は「揚げ出し豆腐」の作り方をご紹介します。居酒屋の定番おつまみの1つで、人気の高いメニュー。サクッとした衣と豆腐のやわらかさに、だしが絡むとたまらないおいしさになります。家でつくれば揚げたての極上のおいしさが味わえる一方、自分でつくるにはなかなか難しい料理でもあります。

よくある失敗は「豆腐が崩れてしまう」または「豆腐から衣がはがれてしまう」というもの。お店のフライヤーであれば豆腐が油につかっている状態をつくりやすく、崩れたり、衣がはがれたりするリスクを減らせますが、たくさんの油を使いづらい家庭では難しい手法です。

一般的なレシピではその解決策として崩れやすい絹ごし豆腐ではなく、もめん豆腐を使う場合もありますが、絹ごし豆腐のなめらかさは捨てがたいもの。そこで今回は絹ごし豆腐を使って上手に揚げるコツを伝授します。

関東大震災から100年。今回は、“ポリ袋”を使った「災害時に役立つ防災レシピ」をご紹介します。ポリ袋を使うことで、袋を容器代わりにして食べることができ、食べた後はそのまま捨てられ、水を節約しながら調理をすることができます。
災害でライフラインが十分に復旧していない時などに、役立つ調理法です。
今回は、防災士で看護師の長田 香（おさだ・かおり）さんに、ポリ袋とカセットコンロを使って作れる3品を教えてもらいました。

◆調理する際のポリ袋は、パッケージに「湯せん調理対応・食品用」と表示されているものを使用してください。

●ポリ袋で作る！基本のごはん

＜材料＞（1合分）
・無洗米 … カップ1杯
・水 … カップ1.2杯
（※今回は1合のカップを使用）

＜作り方＞
１．無洗米を、カップにすりきり1杯入れて、ポリ袋（湯せん調理対応・食品用のもの）に入れる。

２．同じカップで水を1.2杯はかり、(1)のポリ袋に入れる。

３．(2)のポリ袋の空気を抜きながら、袋の上の方でしばる。

４．深鍋に水を6分目ほどまで入れて、鍋底にお皿を敷き、袋を入れる。
【ポイント】ポリ袋が鍋底について溶けてしまうのを防ぐため、必ず鍋底にお皿をしく。
【ポイント】ポリ袋の端が、鍋からはみ出さないように水の中に入れる。

５．ふたをして火をつけたら、強火で沸騰させる。

６．沸騰したら吹きこぼれない程度に火加減をして、25分加熱する。
【ポイント】お湯が吹きこぼれないように火を弱めながら、ポコポコと沸騰しているくらいの火加減に調整して、加熱する。

７．時間が経ったら火を止め、トングや布巾などを使ってポリ袋を取り出す。
【ポイント】結び目の先の部分にお湯がたまっているので、やけどに注意して布巾でお湯をふきながら取り出す。

８．5分蒸らしたら、ポリ袋の結び目の下の部分をキッチンばさみで切り、ポリ袋を開けてよくほぐして出来上がり。

●ポリ袋で作る！焼きそば

＜材料＞（1人分）
・焼きそば麺 … 1袋（付属の粉末ソースも使用）
・カット野菜 … 1/3袋
・ちくわ … 1本
・ウインナー … 2本

＜作り方＞
１．深鍋にお皿を敷き、水を6分目ほどまで入れて、お湯（分量外）を沸かしておく。

２．カット野菜、焼きそば麺をポリ袋（湯せん調理対応・食品用のもの）に入れる。
【ポイント】麺がちぎれてこまかくなってしまうので、この時点では麺をほぐさない。

３．(2)のポリ袋の上で、キッチンばさみを使ってちくわとウインナーを一口大に切り、(2)のポリ袋に入れる。

４．(3)に、付属の粉末ソースを入れる。

５．(4)のポリ袋の空気を抜き、袋の上の方でしばる。

６．(1)の沸騰したお湯に(5)のポリ袋を入れて、ふたをして5分加熱する。
【ポイント】ポリ袋の端が、鍋からはみ出さないように水の中に入れる。

７．火を止めて、ふたをしたままさらに5分蒸らしたらトングを使って取り出す。

８．ポリ袋を布巾でくるみ水けを取りながら上から全体をもんで混ぜる。ポリ袋の結び目の下の部分をキッチンばさみで切り、出来上がり。
【ポイント】熱いので布巾を使って、ポリ袋の上から全体をもんで混ぜる。

●ポリ袋で作る！蒸しパン

＜材料＞（1人分）
・ホットケーキミックス … 100g
・豆乳（バナナ風味） … 100g

＜作り方＞
１．深鍋にお皿を敷き、水を6分目ほどまで入れて、お湯（分量外）を沸かしておく。

２．ホットケーキミックスと豆乳をはかり、ポリ袋（湯せん調理対応・食品用のもの）に入れる。
【ポイント】はかりの上にポリ袋をひろげて先にホットケーキミックスをはかり、続けて豆乳をはかると良い。

３．(2)の空気を抜きながら、袋の上の方でしばる。

４．(3)のポリ袋の上から、全体をもむようにして生地を混ぜる。
【ポイント】袋が破れないように、やさしい力加減で混ぜる。

５．(4)の生地の粉っぽさがなくなり、全体がよく混ざったら、生地を下の方に寄せる。

６．(1)の沸騰させたお湯の中に(5)のポリ袋を入れ、ふたをする。
【ポイント】ポリ袋の端が、鍋からはみ出さないように水の中に入れる。

７．お湯が沸々としているくらいの火加減で、20分ほど加熱する。
【ポイント】お湯が吹きこぼれないように、ふたをずらしたり、火を弱めたりして、様子を見ながら火加減をする。

８．途中で天地を返し、火が通ったら火を止めて、トングを使って取り出す。
【ポイント】10分ほど経つと生地がかたまってくるので、天地をひっくり返して、加熱むらがないように気をつける。

９．布巾で水けを取って、ポリ袋の結び目の下の部分をキッチンばさみで切ったら、出来上がり。
